Analysis of food safety monitoring situation in a canteen of a military base in Beijing from 2015 to 2019

Abstract:Objective To analyze the food safety monitoring situation of a canteen in a military base in Beijing from 2015 to 2019,so as to provide reference and guidance for related work in future.Methods Based on 2015-2019 food safety risk monitoring reports of a military base in Beijing,statistical analysis was performed on year,test items,food varieties and other factors.Results A total of 7195 samples were tested from a canteen in five years,and 837 were unqualified.The total qualificaton rate was 88.37%.Further analysis found tested samples were most in 2015 and least in 2018.The most tested items were the cleanliness of the tableware and cookware,and the least tested one was mycotoxins.Total bacteria had the highest unqualified rate,followed by illegal or excessive additions,and mycotoxins had the lowest detection rate.According to the analysis of food varieties,legume products had the lowest qualification rate,followed by milk and dairy products,poultry meat and preparations had the third lowest qualification rate.Eggs were ranked in top 1 in qualification rate.Conclusion Strengthening food safety monitoring is the most effective measure to ensure food safety and eliminate hidden dangers.
